Now I will admit that ice cream has always been an essential food group for me – bringing back wonderful memories of mint choc chip scoops in a cornet, on the beautiful beaches of Southwest Wales. I am absolutely certain that the flavour was only enhanced by the additional blast of sand and rain droplets…

At the beginning of my diabetes journey, I read numerous negative reports of ice cream, especially the more luxury versions, which saw me remove this treat completely from my diet. Over the past couple of months, with the (slight) improvement of the weather, I have re-discovered my churned friend in the form of those individual tubs containing heavenly ice cream with additional cookie chunks. I have always loved the offerings from those two lovely guys in Vermont, and these individual tubs from Ben & Jerry stop me form over-consuming and enable me to quickly and easily work out their carb and sugar content.

So, with the sun peeping out a little now day by day, give ice cream a go and hopefully it will make you feel as happy as it does me!
